Cauliflower with Red Onion Vinaigrette

Serves 4-6
We made this at our first session of Diabetes Friendly Cooking. Wow, what a delicious way to give this seasonal vegetable great flavour!
1 med-large cauliflower, chopped
2 medium red onions, sliced
3 Tbsp vegetable oil
1 tsp dried thyme or 1 Tbsp fresh thyme
1 tsp minced garlic
3 Tbsp apple cider vinegar
3 Tbsp balsamic vinegar
¼ cup chopped Italian parsley
2 Tbsp shredded fresh mint
Salt and pepper to taste
Blanch cauliflower in plenty of boiling water, 3-5 minutes.
Drain and cool with cold water.
Drain completely and lay on a dry towel.
Heat oil in a heavy pan and cook onions, thyme and garlic slowly until gently browned and very soft.
Add vinegars and remove from heat.
Toss cauliflower in the pan with onion-vinegar mixture.
Add fresh herbs and season with salt and pepper.
Serve room temperature or cold.
