Kohlrabi, Beet and Apple Slaw

Serves 4-6

2 large kohlrabi, peeled and grated
3 crisp apples, peeled, cored and grated
2 medium beets, peeled and grated
2 medium carrots, peeled and grated
1 tsp minced garlic
¼ cup chopped cilantro
¼ cup chopped green onion
1 Tbsp chopped mint
1/3 cup apple cider vinegar
1.3 cup vegetable oil
Salt and pepper

Toss together and serve.
